I am looking for a book with easy-to-make, easy-to-follow vegan recipes.
It does not have to be completely vegan, if there are few vegetarian recipes it's fine, however most of them would be vegan.

I really enjoy anything by Isa Chandra Moskowitz (Vegan With a Vengeance, Vegan Cupcakes Take Over the World, Veganomicon, etc.) (website, with lots of awesome recipes: http://www.theppk.com/). I also second the Moosewood suggestion; while lots of the things in there are lacto-ovo, most things are easy to veganize, and all really good. Lastly, while it's not a cookbook, per se, I've had great success with every recipe I've ever tried from the Fat Free Vegan Kitchen blog (http://blog.fatfreevegan.com/) -- Susan V. is a vegan cooking goddess and makes everything delicious, while keeping things as easy and nutritious as possible. |

My new favorite cookbook is the Happy Herbivore cookbook. All of the recipes are easy to make with ingredients that I usually have in my fridge, nothing I've never heard of (which is my problem with most vegan cook books). HH recipes are healthy but really delicious, I've even made her low fat desserts and love them. The Moosewood cookbook is a great vegetarian cookbook. The soups especially are excellent and I believe most of them are vegan. You'd likely have to make some substitutions to Vegan-ize a good portion of the recipes, so this might not be what you're looking for. The recipes are really worth it though. I'm not a vegetarian and some of my favorite recipes are in this cookbook. Make sure you get the Mollie Katzen one (either the original or new moosewood cookbook). Moosewood has put out a series of additional cookbooks not by the original author that I've tried and found to be a bit disappointing in comparison. |

I get almost all of my recipes from Vegan Dad. There's a bunch online, and he has a book too. I just bought the book and haven't had a chance to try anything, but it looks similar to the website, just more variety. |

If you're looking for quick preparation time, rather than quick cooking time, I'm a big fan of Fresh from the Vegetarian Slow Cooker by Robin Robertson. Almost all of the recipes are vegan, and they provide fantastic flavor with very little work. You can prepare it in the morning (or even the night before), turn it on before you leave for work, and come home to wonderful smelling and tasting foods. |

I followed a strict vegan+fish diet for over 4 years. Far and away the best vegan cook book I found was Vegan Planet (ISBN: 978-1558322110, Amazon link). There are plenty of terrible to mediocre vegan/vegetarian cookbooks out there - I promise you this is not one of them. Another book I like (but not nearly as much as Vegan Planet) is just called "Vegetarian - over 180 tempting recipes" Not sure where I picked it up from, but it can be found around (ISBN: 978-0752588292, Amazon link) |

The Rebar cookbook is fantastic. It's all vegetarian, with some vegan recipes. It's written by the owners of the popular restaurant of the same name in Victoria, BC. Food seems to go over well with omnivores and vegans alike.
