I recently got a good sized Atlantic Cod while fishing. I wanted to just bake it in the oven with some vegetables. The thing is that I had just fried up a lot of bacon in my oven pan, so there was a lot of bacon fat left there. So I got creative.

I put the fish in the fat for a hour on each side and seasoned it with pepper. I fried it in the oven with some onions and served with potatoes and carrots. It tasted great!

Now, what I am wondering is how can I improve on this? Have any of you tried something similar or have recepies combining white fish and bacon?

I downvoted too, because I can't find a legitimate question here. "Improve" is not constructive, anything can be seen as an improvement (or not). "Have you tried something similar" is a poll. I thought it was quite common to use bacon or other cured meat as "seasoning" for white fish. Googling for "cod and bacon" finds many recipes. – Tor-Einar Jarnbjo Aug 15 '12 at 17:59

I found this really lovely recipe from eVines, it doesn't include bacon but you could easily put it in, a nice pancetta would be good. I'd put it in just before I fry the onion so you would get all the nice flavours coating the onion and mixing well with the spices.
