Sure, it's safe - it's certainly much safer than leaving it out all day. However, you have to be careful as rice can grow mold and bacteria very quickly. I'd say it has a max of about 3 days in the fridge.

However, I recommend freezing leftover cooked rice (separated into single-serving portions). Then just put it in the microwave for a few minutes when you go to eat it and it's good as when you first cooked it. It doesn't dry out when you reheat it nearly as easily as putting it in the fridge. Note that this seems to be the standard in Japan - there are special containers (the bottom has an indent) that make sure it reheats evenly in the microwave.

I never thought of freezing leftover rice before, that is a great idea. –  Echo Jul 22 '10 at 15:24

There's no problem storing cooked rice in the fridge, just make sure you cool it quickly after cooking. it should keep for 3 or 4 days.

Uncooked rice should be stored in an airtight container and kept in a dark, cool cupboard.

I think it is safe put it in the fridge for at least 1-2 days. Also, dishes like fried rice usually use one-day old rice.

My favourite way to use leftover rice! Of course, most of the time I end up making day-old rice just for fried rice :) –  Michael Mior Jul 10 '10 at 15:41

Absoulutely, I would suggest adding some water to it when you go to reheat it though. Otherwise you will wind up with dry rice.
