I am looking for a recipe for round extruded cookies with cocoa cream filling for a Rheon extrusion machine.

I tried the following recipe:

flour:100
sugar:33
fat:29.17
oil:30
eggs:17
water:2

With this recipe, the dough is not soft enough, so the cookies don't look nice. How can I amend the recipe to work with this machine?

Since the only way this is on-topic is asking about amending the recipe given, I edited the question to ask specifically how to adjust the recipe for the machine. However, there are no units on the recipe; is that grams? parts? baker's percentage? –  Yamikuronue Dec 17 '13 at 21:20

I've had bad luck with extruders using anything other than variations of the recipes that it came with ... because they have different die sizes, each one has a different ideal moisture / viscosity / etc. –  Joe Dec 17 '13 at 21:20

this is % of tatal quantity –  Nick Kadiyski Dec 19 '13 at 20:09
