I am going to cook a beef roast: To which internal temperature should I cook it for rare/medium/well done?

| Rare        | 120 to 125 degrees F    | center is bright red |
| Medium Rare | 130 to 135 degrees F    | center is very pink  |
| Medium      | 140 to 145 degrees F    | center is light pink |
| Medium Well | 150 to 155 degrees F    | not pink             |
| Well Done   | 160 degrees F and above | brown throughout     |

I am curious: how did you write the table keeping the '|' aligned? Last time I tried, the parser was ignoring any spaces after the first, with the effect that I would not get what I was trying to obtain (the table as you wrote it). :-) – kiamlaluno Aug 27 '10 at 14:40

grrrrr, I'm having trouble finding the source, but I'd like to point out that the US gov doesn't agree with these numbers at all. Their numbers are much higher. However, I agree with hobodave. The gov is much closer to the numbers on wikipedia: en.wikipedia.org/wiki/Beef#Internal_temperature – yossarian Aug 27 '10 at 14:48
