Regarding the water sloshing - a solution to that would be to upgrade to a larger baking dish, one that will hold the round without being too tight, and then when you remove it, just leave the water in the oven until it is cool enough to move without being a hazard.

OP specified they are using pre-roasted powder, not whole beans, so adding the cocoa isn't going to work since it'd be whole beans in loose powder - unless that is what you intended.

It also depends on how you want to prepare the turkey - if you butterfly it or break it down, you'll end up with something considerably smaller / easier to cook. You only really need a large oven if you want to roast it.

This depends on your location, as do many other things - my local grocer consistently stocks Orange Blossom and Alfalfa in addition to the typical Clover, plus any rotating stock. Definitely recommend trying other varieties than clover or wildflower, especially if you feel you don't really like honey.

Depending on how you are cooking, a great majority of the seasoning can easily fall off into the grill, stick to the pan, or other similar fates. You can avoid the over-salt by going with high quality seasonings, such as Spike or Mrs. Dash, or just rolling your own out of herbs and spices.

This is what I would do, you just need to take care depending on your sauce and how low your "low" setting actually is on the crockpot. A sauce with a fair amount of sugar in it ( eg, one based off of tomatoes or containing brown sugar ) will scorch and burn if left unattended for a long enough period of time.
