@PeterTaylor, hot mustard is just one of many options you could make with a hot sauce base, and you could make it out of anything. And buying mustard doesn't necessarily mean it doesn't have sugar in it. You can make mustard without sugar.

I love using mason jars but I can never get the lids on tight enough to avoid leaks (unless it's a preserve I haven't opened yet). I wonder if there is a better sealing cap out there somewhere.

@rumtscho, I agree. What I meant to get across was that with the oil in there as the primary liquid the pH definitely won't be low enough, vs. if you used vinegar as the primary liquid it wouldn't be as much of a problem.

I imagine the maceration and extra cooking gives them a better texture and flavor. I'm sure you could try a small batch of jam where you simply mash the grapes at first, then process through a food mill afterward, and see if the taste and texture works for you.

@BlessedGeek, okara is really great in bread or veggie burgers. Tofu is made my curdling the soymilk with vinegar or nigari. You need a lot of soymilk to get a decent amount of tofu.
