I tried again without any whole wheat flour, used 100% AP because my local grocer doesn't seem to have bread flour and it turned out much better. Also I'm kind of an idiot because I tried just pulling the dough until it windowpaned. This video from Alton Brown made sense and I got it to windowpane the way he did it: youtu.be/OmiY8vbiBo8?t=3m7s

This is great, thanks for the feedback. I'm going to try again tonight/tomorrow morning without the whole wheat flour. I might pickup some bread flour today. I'll let you know how it goes but this is definitely a great answer right now.

Yeah, it just pulls apart and tears before it gets anywhere near thin enough to be translucent. Like I said I use a 5-3 ratio, some of that flour is used for dusting my hand, the board and while kneading. I'll try adding more water and see if the results are any different.
