The most consistent yeast is 'instant yeast' - SAF instant yeast is what I use and its recommended by many professionals.

Are you proofing your yeast to confirm its good? It sounds like dead yeast. I'm assuming this is what you mean by 'activate', but I'm not sure. Do you see bubbles?

Its probably important to note that on a 4 pound cut of meat, whole, no seasoning is going to penetrate the interior of the meat. That's what sauces are for :)

I can't recommend it, as I've never used it, but the reviews are good. The safest to leave all day would be something like this insulated bag.

@highBandWidth - It depends on if you trust your oven to be on all day or a small electrical appliance to be on all day. Either way there's a risk of leaving something plugged in like that. Generally small appliances carry a much higher risk than an oven at 230 degrees.
