comment How do you peel chickpeas?
That a good trick, I think a lot depends on the type of chickpeas in play, the Israeli sites for making humous seem to recommend a similar technique.

comment How do you peel chickpeas?
Yerp the easiest way I found to date was part cooking, rinsing in cold water, agitating the skins and then skimming off the mess.

comment How can I make a silky smooth, rich mash?
It was funny, my wife very quickly added a bunch of comments when I was doing this: "What are you doing? Make sure you cut all the potatoes to roughly the same size", "In general when boiling starch you start from cold" and so on ... there is so much unwritten knowledge to even the simplest of tasks
