comment How can I save crumbly cookie dough?
I'll put this in a comment since it doesn't answer the question with cookies as a result; I would scatter the dough crumbs on a sheet pan and bake a little less than the directions call for to account for smaller size. While not cookies, the resulting crumbles could be further broken into crumbs for a cookie crust or used as a garnish on desserts.

comment Sousvide seafood for sushi
"Sushi grade" in most countries is not legally regulated (or certified) but a marketing term. Even in the regulation happy US there isn't anything more than recommendations from the FDA to hold fish at specific subzero temps for an extended time to kill any parasites, but its not law to do so. Having a reliable source and using a critical eye is still the best way to buy fish for sushi.

comment Is there a releaseable mold/pan for bread?
I'm surprised nobody mentioned brotforms, baskets designed to shape loaves during the final rise. sourdoughbreads.com/Brotform.htm

comment Is it safe to “salt bake” using ice cream rock salt?
The fact that the same stuff used for sidewalks is used for livestock indicates to me that it is a taste factor, not a personal safety one when kept in reasonable quantities, and ice cream salt is not treated with the additonal chemicals found in road salt. Regardless, I'll stand behind my pretzel salt suggestion as an alternative to trying to find rock salt sold as edible.

comment Homemade mayonnaise difficulties
For the immersion blender method, how narrow is the container you use? I use that method myself and it doesn't work at all unless the head of the blender barely fits at the bottom of the glass. And for the record that method works with whole eggs too, I don't bother separating.

comment Could coconut cream be used to create a non-dairy ganache for whipping?
Coconut cream from the separation of coconut milk is culinarily very far from coconut oil, like dairy butter the coconut cream has much more to it than fat/oil content (coconut meat extratives, water, etc) and that makes a huge difference in terms of flavor and cooking behavior.

comment Chocolate bars - Actual shelflife vs expiration date
If you're okay with a certain amount of quality loss in favor of food safety you can always freeze a number of them for indefinite safe storage.

comment Mortar and Pestle: Granite vs Porcelain
I have a granite one, and my big gripe with it is the smoothness of the stone makes stuff slide around more than grind, but that may not make much difference with something as soft as avocadoes.
