I don't know how finely it's milled. But when I look closely at it, it's true that it's not perfectly uniform...there are white bits and light brown bits. I'll try to cut down on the spelt next time...

I have a kitchen scale that I use to weigh the flour mix. I take 70% of their combined weight, and measure out that much water.

Nope. To be honest, it seems like there's so little of them that I just eyeball it. A splash of olive oil, a little pile of salt in the palm of my hand, a spoonful of honey. I might be lowballing my estimate of the olive oil (maybe it's 2-3 Tbsp), but the others are probably about right.
