Wrt "In the UK it's illegal to wash eggs. In the USA, the USDA requires all eggs be washed. So who's right?": (machine) washing the eggs will damage the outer layer of the egg. To me the bag wasn't important - it is just a practical way to separate the grounds/leaves from the brew. I agree that you could use a bag to make coffee, if you only need a single cup.
