What is a substitute for mascarpone cheese? +1 to offset @hobodave .. the ingredients are the same, but the proportions are different, plus the "full fat" advisories, which are (unfortunately) helpful in this age of reduced-fat everything! |

What is a substitute for red or white wine in a recipe? If the reason is possible alcohol exposure, be aware that in any recipe in which the wine is cooked, the alcohol content is quite low because the alcohol boils away. Alcohol boils evaporates at a much lower temperature than water, so even a couple of minutes of simmering on low temp will boil most of the alcohol off. |

How do you know when mussels are done? +1 - I concur. If the fraction of dead mussels was significant, I would go complain to the place they were purchased. |

How do you steam vegetables? They work, but IMHO they are both wasteful and far too expensive. |

How can you melt chocolate without it getting wet? +1 for the step-by-step. THE KEY IS TO GO SLOWLY, say 20 seconds at a time, perhaps lowering the power of the microwave, to avoid burning. This also works for butter. |
