You might try breads first. In my experience they have more crust and more structure overall so they are easier to get out of containers in one piece.

SW American or English scones? The former is fried bread dough, the latter a sweet shortbread (biscuit in the US). I assume that you are referring to the English version 1- because it is harder to make correctly and 2- because you said "proper".

I have to admit that this starts to get to the limit of my understanding but Harold McGee has the following to say: "(heating the milk) improve the consistency of the yogurt by denaturing the whey protein lactoglobulin, whose otherwise unreactive molecules then participate by clustering on the surfaces of the casein particles." On Food and Cooking pp 48. Actually I'm going to put the full quote in this answer.

Yogurt and cucumber is a common pairing and eaten across the middle east, eastern Europe, and southern asia (at least the parts where yogurt is common). The Greeks derived their Tzatziki sauce from the Turkish Cacık. The ones I have seen vary a bit in the spices and ratios. The question is certainly about this particular Indian variant and not yogurt-cucumber sauces in general.

My crock pot sous vide setup with a homemade controller is only adequate. I get reasonable temp accuracy only if the pot is under filled enough to allow convection. I am in the process of replacing the crock pot with a large tub and a water heater.
