How to cook squid to get rid of the 'urine' flavor? What causes that flavor? Regarding the "taste of urine", in a high school biology class our teacher covered the topic because there is a specific chemical in urine that is responsible for the foul taste that most but not all of us will have the gene that makes it taste that way. There is a small subset of people to where that chemical has no taste at all. So it would be that chemical that would be responsible for the taste and wouldn't have to actually be urine to cause it. |

How can I make Chinese chicken fingers like in the northeast USA? Agreed on those being sweet and sour chicken pieces. Also, this is not just Northeast, I can attest to that style existing in Michigan and Texas. Some places do a tighter crunchier batter (my preferred) and others do this soft fluffy batter. |

What are other techniques are used to tenderize steaks apart from using a meat mallet? @Joe yes I wouldn't use this tenderizer on most pieces of meat, it is for very tough ones to break up as much connective tissue as possible not just to make a few holes for a marinade to get into. Of course, there are people that will argue holes in meat to get flavor in will inevitably just let all your juices flow out. If it works for you though, I say keep it up. |

What are the main styles of pizza that are popular in America? The neopolitan is by far my favorite, although I enjoy the others too. I'm lucky enough to have one nearby and it looks like I have one of the "certified" ones local too, will have to check it out. |

I wanted to make homemade pickles, does it matter what type of salt I use? it isn't all about differences but how they act in given situations. Just as Kosher salt is named so for its use in the koshering process because it is better at absorbing the blood from the meat, Pickling salt is named for the reason @JustRightMenus describes. It is a "use the correct tool for the job" situation. Sea salt on the other hand, you can have a lot of taste variation, even between different sea salts, as they have differing mineral compositions. |
