comment What is a poolish starter?
Thank you all for these answers - I asked out of interest, and you have certainly satisfied my curiosity! I don't think I will actually use a starter in my bread as we make it in a machine and although the science makes sense (in Julio's answer, which is why I chose it) I don't think the benefits in this case outweigh the extra time it will take me! Thanks everyone!

comment Is there anything I can add to homemade bread to preserve it?
I will think about the sourdough idea but I've never heard of poolish - what is that? Or should I ask it as another question?!

The bread isn't going hard - we keep it in a plastic airtight container, so that's not an issue.

Interesting answer, but I'm sorry - I'm with hobodave on this one. The idea of my sandwiches having a faint vinegar flavour isn't something I'm happy with!

It tends to go off in a week. We use yeast, strong white flour, butter, sugar, salt, water.

This is interesting, but I was really just looking at how cost efficient different fruits are. As shop bought jam is obviously cheaper than making your own, I was just interested in comparative cost efficiency. I think your footnote is the kind of answer I was looking for! Thanks!
