comment what's a good technique for pasteurizing eggs?
@jcollum: The worry with eggs is more about the outside, than the inside. Salmonella bacteria live on the surface, not on the inside. The problem is that it's impossible to get to the inside without some contact with the outside, so either sterilize the outside, or sterilize the whole mess. Beyond that, the yolk is the part of the egg least likely to be hosting any bacteria...The white is full of natural antibiotics, and the shell membrane is an excellent barrier against bacteria.

comment Is it safe to eat a cooked steak that (briefly) touched the plate that was holding the raw meat?
If it were chicken or pork...or even hamburger, I'd worry, but not steak. 99.9% chance you could have eaten the whole thing raw and had no issues of any kind. Good betting odds.

comment With what can I replace eggs?
I once made brownies with a vegan-girlfriend-of-roommate, substituting bananas and applesauce in place of eggs and shortening...They were delicious for about 5 minutes, then they set up so hard we had to throw away the pan. Literally. Soaking did nothing. It was like soaking a pan full of chocolatey pumice.

comment What is slow cooking and what it is good for?
@cinque: In no way does the puppy endorse anything that might burn your house down. Always use caution with things that produce heat, etc, etc. If your meat is not wholly submerged, it'd be better if you were around to flip it at some point. Otherwise, doesn't matter.

comment How long can I leave an uncooked steak out?
@hobodave: It's been 100+ here all week with 100% humidity. I feel like I could live in a walk-in freezer, no problem.

comment How long can I leave an uncooked steak out?
@Harlan: That's pretty much how I like it, actually. Fridge to plate in 10 minutes or less. Why buy steak if you're going to cook it to death? Might as well have a hamburger, and save a buck.

comment Storing Pizza Stone in Oven
@ManiacZX: The biggest problem with mine isn't recovery, it's that the thermostat is old, and causes the elements to kick on more often than normal. For the most part, it's not a big deal, but for bread or muffins, or whatever, I make sure to keep the stone in the oven.

comment What's the proper way to dispose of used fats & oils?
@Adam Shiemke: Yea, it doesn't degrade. The guy who comes up with an enzime that eats fat will make a mint cleaning arteries and drains.
