i have had hundreds of tea-drinking experiences with chinese people, in chinese houses, and i have never heard of doing this.

i see the point of doing this with black tea. but with green tea, i daresay you're ruining the health benefits if you do that, and there's absolutely no need. that 'bitterness' is the catechins breaking down. hc2d.com/content.php?contentId=14728 green tea simply needs boiled-once water that's just above being tepid (cooled for 20 minutes maybe).
