I am a researcher at Incipit, where I read, write, think, have coffee and also write code every now and then.

I have extensive experience in method engineering, software methodologies, conceptual modelling, software development techniques, technical writing and project management.

I'm also a partner in two businesses where we develop large software applications and services, and I participate in standardisation projects with ISO and AENOR.

You can also find me on LinkedIn and I keep a couple of blogs.

Removed spanish-cuisine tag, since this is Peruvian rather than Spanish.

comment Pimenton ahumado vs. Pimenton de la vera
Why the upper case in "Pimenton"? It should be in "La Vera", which is the name of a place.

Chorizo for eating is not cooked, but it is eaten raw. The difference between it and chorizo for cooking is explained in my answer.

comment How do you prep Bacalhau (salted cod fish) before cooking?
The fish will rehydrate in a couple of hours at most; the long soaking is useful only to extract the salt from it. Also, I disagree with your suggestion to buy fresh cod in substitution: salted cod and fresh cod are two different things, like fresh apricots and dried apricots. They have different uses, they are used differently, and they result in very different dishes.
