I was going to post something like this, except it's not always necessary to even turn more than once. I just leave them upside down and don't have to think about it. You'll end up with extra oil on the bottom, which is only a problem if the consistency is too thick without the extra oil getting integrated.

You probably wouldn't like my cooking; if something calls for cilantro, I'll generally put the entire bunch in. A cup, to me, isn't a very large amount. But I agree, unless a recipe explicitly says to pack it down, do not pack herbs.

Yeah, I had an egg slicer that I wanted to find other uses for and tried it on a mushroom. It cut one mushroom nicely, and then fell to bits on the second one, not something I'm going to bother replacing.

Broiling isn't just about temperature, it's the radiant direct heat and it might take a huge ambient temperature to get close to that. It might be worth looking into replacing or repairing the broiler element, they're fairly cheap ($15-25) and usually can be replaced without much hassle (unplug everything first!). Also, you could try it again with the food much lower in the oven and the door open to watch (with extinguisher handy just in case)

I've got one of those too, but it does feel like it leaves a large amount of flesh behind. At least it means I get to gnaw on the pit while other stuff is cooking.

comment What's the best approach to get runny-yolk sunny side up fried eggs?
Is over-easy out of the question? I just flip them after most of the white has cooked, and then immediately take them off the pan. You lose the perfect sunny side up presentation, but they taste the same and the yolk remains liquid.

comment Why do chefs traditionally wear a high white hat?
Are the chefs cooking in the middle of a battle, or do the knights just run through the kitchen, swords swinging? If the latter, wouldn't a suit of armor be more appropriate? That would give a new meaning to iron chef.
