comment Does ginger have to be peeled? If so how?
I often strip ginger, julienne, rather than mince it - then the peel would be unpleasant.

comment What is chickpea flour used for?
All good foods - those would translate to Shirini-E / Nan-E Nokhodchi (chickpea cookies), Cutlets, Kofteh (like many of the Kofteh Tabrizi balls (though I usually see these done with soya protein).

comment how do I cook sausages without poking holes through them?
@TheodoreMurdock: I was thinking more of British sausages, which are a fairly different affair and my understanding of the word.

comment Any secondary uses for taffy?
@rumtscho: Granted, whilst taffy does exist in places in the UK, we never really use the concept. However, toffee does come in many variations and much toffee that is sold is more similar to taffy in physical properties.

comment Substitute for lemon grass in curry dish
@Laura: If you can not obtain an ingredient that provides a significant taste factor, then the end result will not taste as expected. Lemongrass is not often star of the show, occasionally perhaps, but not usually. I would say just add some lemon or lime juice or zest, not too much, and see what it tasted like - or just leave it out altogether. In that congee recipe, I would probably use a squirt of lime juice instead. It wouldn't be the same, but would be alright with the other ingredients.

comment Does golden syrup 'go off'?
@Chris Cudmore: Aye, quite true. I am allergic to mould myself, so am the special case. But even I occasionally do such things if very careful.

comment Meatballs in tomato sauce using a rice cooker
@daniel: They are not anywhere near the same, but I imagine you could have a very spicy meatballs in salsa as a relatively similar alternative.
