I cooked the meat prior to adding it in the soup and then cut it into small cubes. The meat is very tender. I sweated the onions in some butter along with the carrots. I ended up adding a bit more pepper and rosemary and that did the trick.

I put in about a 1/8 t of ground black pepper, a few shakes of the seasoned pepper, and a pinch or so of rosemary. When I cooked the beef roast, before cubing, I rubbed on salt, pepper, and rosemary.

Also, I said latex-free that way if you are allergic to latex they won't bother you and some (pretty sure latex ones) come with a powder on the inside of them so that might have the possibility of getting on the food. Not sure if it is harmless or not. To stay on the safe side, go with latex-free.

They are expendable, they usually come in a box of 100 and can range in price from $5-10 US. As for links, you can just check them out on amazon.com or a site like it. And I am pretty positive they are safe when dealing with food.

@Tim- In my culinary class, if you were to cut your finger or something, you would apply a band-aid and then put on a normal latex-free glove (like what doctors wear). Should work for rinsing food and what not.

@justkt: True, but are a large percentage of places in one city going to use the same exact recipe? I understand there might be similarities between the recipes but I don't think that all pizzerias are going to use the same sauce. That is all. =)

@Paul, welcome to Seasoned Advice. Unfortunately, recipe requests are off topic. Maybe if you changed what you are asking to something along the lines of "What makes Montreal pizza sauce taste unique compared to other pizza sauces?", it would work but if left as is it will most likely be closed.

You are correct with the assumption that the water reaches 100°C when it starts to boil. As for the average temperature, I think it would be really hard to calculate since you would have to take into account what temperature the room is in and what not.
