At home I have always kept ketchup in the fridge after opening but now that I think of it, pretty much all restaurants that offer ketchup keep it on the table. And if you do ask for ketchup it is usually room temperature, implying it wasn't just pulled from the fridge.

I was just giving a suggestion, I knew that they didn't sell those exact brands but thought that I would just put it out there. It was just a place I knew that sold chocolate in bulk.

I don't know where you are from, but if you live in Canada you could always check out the Bulk Barn. They might not have what exactly you are looking for but I'm sure there is something close.

Just out of curiosity, what types of food are you cooking directly on the racks? Something like roasts or something completely different? I have never cooked anything directly on the racks.

I didn't give an answer per say because I don't know much when it comes to candies, that is why I chose to comment. But like I said I know that the oils my grandmother used tasted good but I have never had candies with grocery store juice. Sorry I am not much of a help.

+1 to Joe - I was also going to suggest oils, but I wouldn't be much help as to where to find them or how much you should use. I do know that my grandmother made candies not too long ago and that is what she used and they turned out really good.

My mother has our family's beef jerky recipe, and it calls for sticking it in the oven. Unfortunately I don't have the recipe so I can't give you any pointers on how to go about doing it, but I know that it is possible. =)

I buy the extra lean or lean ground beef just because that is all that is usually available, but it still tends to render off a good amount of fat.

I live in the Maritimes and I have yet to see them in stores, but I shall keep my eye out for them. I had had the feeling that they were developed in the Yukon Territories, hence the name. ;)

I have always grown up just putting the beef directly in the pan as well. It wasn't until a few years ago while watching T.V. that I saw some chefs add oil to the pan before the beef. I have been confused ever since.
