comment How do I make paneer firm and chewy like in the restaurant?
In India, Paneer is usually made from buffalo milk. I don't have a source for this, but Buffalo milk has higher cream content, and that helps to make firm paneer. UHT or Cow milk will always result in not-so-good paneer.
