I answered a similar question to this before... Take a look at this:cooking.stackexchange.com/questions/10761/…. I'd skip the cornstarch by the way. Also, if you're dead set against the water bath, be VERY mindful of overmixing. It's the air you're incorporating that is going to cause the issue.

comment Why is it necessary for Turkish Coffee to start brewing with cold water?
It might also be noted that you should use cold water when you make any coffee. Cold water is more fresh (it hasn't spent any length of time sitting in a hot water tank). This goes for boiling pasta, potatoes, or anything else.

comment Can I make puff pastry with half the butter?
Interesting to read the different views on butter temperature when making butter puff dough. In my experience, the most important thing to remember is to 'match' the dough consistency with the type of butter you are going to use. In other words, if you are using room temperature butter, you make a softer dough. If you are using cold butter, you make a stiffer dough. It's all about making sure you can keep your layers stratified without working the fat into the dough. If you had a soft dough and hard butter, the dough would be torn all to hell...

comment What is the liquid often ladled onto the grill top in restaurants?
It's either water or some type of stock (chicken, vegetable, etc.). Just throwing oil on with a lid wouldn't do a heck of a lot.
