Shouldn't it be all bread flour? The protein content is higher in bread flour and helps to form the gluten threads that give the noodles their texture. Also, are you sure you are kneading them enough to get the gluten going?

@NimChimpsky: "roasting something with peanut oil sounds disgusting". Why would you comment about something that you obviously have not even tried? Peanut oil is actually quite neutral. It has a light nutty flavour and is perfectly suitable for all the cooking methods the OP asked about. As for whether butter is unhealthy or not, well, that is up for debate. Some claim that there is no scientific evidence for butter being unhealthy. Of course it is up to the individual to choose what to believe. If you are looking to make it sweeter, adding more sugar or syrup would be the obvious answer. Also, on a side note, you can always let your sorbet thaw, make the necessary corrections and just churn it again.
