Can I carve up a suckling pig like you would an adult pig? "end up with meat you don't want to eat"? Sounds like you are knocking gelatin. Don't do that. It is precisely the gelatin that makes suckling pig so juicy and delicious. |

Ice cream problems It definitely does not need 20 minutes at that temperature. When your custard reaches the prescribed temperature it is done. However, you should be aware that if you cook it in a bain-marie it will take longer than if you heat it in a saucepan directly on the stove top. But 20 minutes still seems excessive, even for a bain-marie. |

What is an easy-to-make dessert that goes well with Indian food? If easy-to-make is your priority I would go for mango lassi. It is simply mango blended with youghurt. You can also add milk to adjust consistency, or add sugar to adjust sweetness. |

Why add yogurt to curries spoon by spoon instead of all at once? Everything in your answer makes sense, but will it really make that much of a difference here, where the recipe calls for the curry to "simmer for an hour or more"? Will not the simmering cause the yoghurt to curdle anyway? |
