Should I brine a goose? thanks for that info . Brining a turkey or a goose was completely foreign to me. It was helpful and I think I have a plan new years. |

What are the basics and options of brining meat, for example chicken? If your using juices do you adjust the water level? |

Oven Jerky a Possibility? I have tried a few different soya sauces and find the best to be China Lilly. Don't add any salt, the sauce leaves it salty enough. |

Why do some countries prefer UHT milk and cream? Funny I am not sure what you guys are talking about. We only have pasteurized milk in Canada, that I know of. Unless you are talking about milk in tetra pack style boxes. That stuff is only for camps, somewhere without reliable refrigeration. I'm sure when I tasted it I thought powdered milk was better. |

How can I ensure food safety if my cooking utensils have touched raw meat? Ah, you guys talk about bacon all you want, but there ain't no bacon like Canadian bacon. |

What can I do with frozen eggs? I was told that it is not necessary to thaw them out, just don't have them on to high of a boil when putting them in. |

How can I ensure food safety if my cooking utensils have touched raw meat? I use one utensil to place the meat in its raw form. Then The cleaned utensil will be used for the turning of the meat, yes it is the same one, not cleaned throughout the process. I only use it for the meat. When I am done it is cleaned again. Just on habit I will clean it during the cooking, but more out of habit than because I worried about anything. |

Substitute fresh garlic instead of garlic powder? I think the important thing here is to remember you can never add to much garlic. |
