@KristinaLopez my point was that the question is unanswered. The fact that neither you nor I can find information to answer the question does not change this point. I made the point because upvoted and selected answers often discourage new answers. But I also started a bounty to encourage additional contributions.

@Kristina I don't think it was covered - if this has the same cause, the presentation is different and requires the assumption that heritage chickens are more like ducks than commercial chickens. And my question is about chickens.

@rumtscho, I agree but for the record, I think that the use of commercial "kits" that come in the mail and provide fresh mushrooms on the tabletop is an amaxing culinary resource and require no expertise so could be on topic - or at least of interest to the audience of this site.

-1 I have grown mushrooms quite a bit and am certain that this is a weak answer. The links you give are for commercial kits, which the question explicitly asks to avoid. It is clear that you do not have any experience growing mushrooms, and mushroom compost is not a good substrate.
