comment Is there a difference between freezing meat at 26°F and 0°F?
@satanicpuppy Surface moisture is still just water (e.g. evaporated from the moist bird) and freezes at 32F like any other water. The freezing point goes down when something is dissolved in it.

comment Why did my attempt at pan-searing beef filets fail miserably?
Related: cooking.stackexchange.com/questions/44194/… -- you never know if the Internet's "a few minutes" is what a timer says or how long it feels to them.

After waiting an hour, and before brushing with oil, pat the steaks dry with a paper towel. Any moisture on the surface of the steak will cause it to "steam" instead of sear. If you salt them at the beginning of the hour it will draw out even more moisture for you to remove.

The important thing for freezer burn isn't the vacuum, but the thickness (really the vapor impermeability) of the vacuum bags. Ziploc-style bag works fine if they're thick enough.
