Replacing butter with olive oil @Rincewind42 For the gravy and soy sauce, I substitute for improved flavor (IMO) but mainly for sodium. Different reasons for the substitutions. |

The art of Sushi: using wasabi to kill parasites Thanks. I've only seen korean chefs (which I always thought was weird) but whatever. What you say makes sense. I've only been to one high end resturaunt, but still they didn't serve wasabi on the fish. So...even though I use chop sticks I still look american because I mix soy sauce and wasabi?? Oh well. |

dehydrator temperatures I don't expect anything to compare to commercial. My beef jerky is far superior to what you can by in the store. I'm good with what I produce. Just want to get the techniques correct |

dehydrator temperatures thanks. I'm actually expecting it to come out like previous batches (made with a different dehydrator). My grandma used to dry pineapple (canned I think) and it would become hard/crispy. The user manual for my dehydrator says 4 hours at 135. I let it go 140 for 6 hours plus rotating the trays. |
