Mar 18	comment	Does milk matter to achieve the perfect latte? Hi Martha, that is one aspect of it. Foaming. My comment was motivated based on a latte that I tried from a gourmet store in Dallas. They use "secret" milk, and they got national recognition. Their secret milk, is nothing more than soy milk. I wanted to get the opinion of all the foodies and chefs here in terms of the properties of milk.
