+1 I guess nomenclature might vary from place to place, but I'd call choice #3 a grill pan rather than a griddle. To my mind a griddle is a flat surface with little or no sides, something suitable for frying eggs and cooking pancakes.

Simple syrup is indeed available ready-made -- it's usually sold near other cocktail supplies. It does seem a little silly to spend a few bucks on something that you can make in a few minutes for pennies, but in any case the syrup used for meringue is more concentrated than the 1:1 sugar to water ratio in simple syrup. Perhaps you'd get to the right concentration by the time the syrup reaches the right stage (248 degrees F), but that'd just take longer.

So, just to be clear, the question isn't so much about whether stainless steel can help remove garlic smells from your hands, but rather whether cooking foods containing garlic in stainless steel has any impact on flavor. And, of course, I'm looking for evidence-based answers or pointers to research rather than opinions or guesses.

Guessing you mean "submerged in oil" above. I've never heard of anything getting a nice crispy crust when cooked in water.

@Brendan stretch in this context means to add some other ingredient to increase the volume of chocolate. When you stretch something you make it go farther. Nothing to do with actual elasticity, melting, etc.
