Boyajian Pure Lemon Oil can (sometimes) be used as a substitute for lemon zest when what you're after is really just the oil and the aromatics. It's a good product in my opinion, and a little goes a long way.

Well in my experience it's not so much sourness, though I suppose that's possible. Usually the problem is that the food develops an "overcooked cabbage" smell. It's hard to describe; the easiest way to get the idea is to overcook some broccoli in a covered pan :)

I generally agree but see for example this question. I've done that with onions in stainless steel, and it "works", but anything with more moisture than an onion will of course stick aggressively.

I think you'd be better off adjusting your taste to real mayonnaise flavor. Also, a great side benefit of making your own mayonnaise is that you realize that it's almost all oil. Use good oil; use garlic; use whatever spices and herbs that you like. Homemade food means you're making what you like. The mass-market products are optimized for production cost mostly.

So long as you don't do something like poison the yeast with too much salt, or use "dead" yeast, then yeast doughs like this basically have to work. It's inevitable. Don't be hasty. It's much better to start your dough a few days in advance anyway; it'll taste better.
