What fuel (burning material) gives the best flavor to meat when barbequing? I wouldn't say it's exactly "subjective" as there are official census regions and geographical, historical, and cultural divisions. The South is south of the Mason-Dixon line and the Ohio River, and the Northeast is the part of the original Thirteen Colonies that are north of the Mason-Dixon line. The Midwest is west of the thirteen colonies but east of the Rocky Mountains. The West is the Rocky Mountains to the Pacific Ocean. |

Should I press the chicken breast against the pan when I grill it? @Aaronut I meant for a marinade. Not pouring a bunch of it into the pan. And I haven't had problems with acidic ingredients in my well-seasoned cast iron. Of course I don't simmer acidic stuff for a long time in cast iron, or leave it sitting on the pan. |

What is a Chutney? I've definitely had chutneys that were nothing like a jam, savory or not. Green (hari) chutney for instance is a thin liquid, more like an Argentine chimichurri or Italian salsa verde. It isn't cooked at all. There's also yogurt chutney, which is just spiced yogurt. |

Are recirculation extractor hoods good? With gas, not only do you have the grease, smoke, steam, and odors from cooking, you also have the combustion products of your stove. Depending on how cleanly your stove burns, there may be significant levels of carbon monoxide. Even if there aren't, your stove is still putting out significant amounts of carbon dioxide, so you want fresh air coming in to replace it. |
