Not a straight crosswalk, as you say - jelly is used to mean "jello", for "clear" jam, and also for savory jellies eg. aspic, although these are rarely met nowadays. Jam is used where the product is not clear, except when the basis is citrus fruit, which is called orange, lemon, grapefruit or lime marmelade. Marmalade used by itself implies the use of oranges.
