Just looked up Rancidity so I was clearer on it: en.wikipedia.org/wiki/Rancidification Seems to indicate here that the ratio of fat to water is a significant factor in rancidity. Also, exposure to oxygen (cover with butter dish). Your mileage may vary, but covered on counter top works well for us.

Hi Daniel, thanks for the correction on rancidity. Just a question, is removing moisture/water not what preserves salted/dry cured meats etc. and prevents it becoming rancid?
