How do you correctly soften butter for spreading? Just looked up Rancidity so I was clearer on it: en.wikipedia.org/wiki/Rancidification Seems to indicate here that the ratio of fat to water is a significant factor in rancidity. Also, exposure to oxygen (cover with butter dish). Your mileage may vary, but covered on counter top works well for us. |

How do you correctly soften butter for spreading? Hi Daniel, thanks for the correction on rancidity. Just a question, is removing moisture/water not what preserves salted/dry cured meats etc. and prevents it becoming rancid? |
