My name is Hans Polak, I'm the owner, cook, dishwasher, maintenance guy and web designer at 'La Casa del Holandés' in Spain. My wife is the general manager, maître d', kitchen hand, cleaning woman and community manager.

I have a master degree in Cognitive Artificial Intelligence and specialized in Human Computer Interaction. That's the reason I choose GUI Junkie as my on-line personality (GUI stands for Graphical User Interface).

My wife is a psychologist.

Thanks to cooking.stackexchange I'm becoming a better cook, and, to give something back, I've posted a number of improvement suggestions at MSO, resulting in four (!) question bans in one year (these have all been lifted).

@BobMcGee, I've updated the text. Note that sourdough is quite resilient and it takes some abuse before it goes 'off'.

Do the home grade mixers always 'walk' or does that depend on the amount of dough?

@Aaronut, I'm translating from Spanish. It's sometimes called Kitchen Robot here, but also Mixer. I think robot is the preferred term here.

I used the brand name for clarity as I'm not sure 'stand mixer' is the usual expression.

@BobMcGee, you can start a sourdough from regular yeast, it'll give you a jump-start. The bacteria will get in there and will form the water on top (alcohol actually). You're right, about the sourdough refreshing, that sourdough should be in the fridge.

How about '21 days' for vacuum packed foods, or does that only apply to cooked foods?

Instead of wood, try polyamide for high heat resistance.
