My name is Hans Polak, I'm the owner, cook, dishwasher, maintenance guy and web designer at 'La Casa del Holandés' in Spain. My wife is the general manager, maître d', kitchen hand, cleaning woman and community manager.

I have a master degree in Cognitive Artificial Intelligence and specialized in Human Computer Interaction. That's the reason I choose GUI Junkie as my on-line personality (GUI stands for Graphical User Interface).

My wife is a psychologist.

Thanks to cooking.stackexchange I'm becoming a better cook, and, to give something back, I've posted a number of improvement suggestions at MSO, resulting in four (!) question bans in one year (these have all been lifted).

comment How much Saffron to use?
A couple (4-6) of threads should do it. Buy whole saffron. Soak it in warm water, and yes, don't use too much of it.

Pasta water from restaurants can become very 'muddy' according to McGee. Look at my answer here.

comment How can you prevent lettuce from becoming bitter?
I'll give that a try (the lemon juice). Eating faster is a bigger problem as these are BIG lettuce.

comment How can you prevent lettuce from becoming bitter?
At any rate, the question is how to prevent bitterness from building up. The lettuce started out perfectly.

comment How do you get a feel for the heat (direct heat)?
Very nicely put. I'll train myself with this method, but I do need the metric system!

There are a lot of similar questions out there. The fact you post it means you know, deep down, that it's not safe.
