comment Flourless cookies form “skin” that seals in moisture
Could flip them over half way, after they are stable to dry them out more. maybe try the recipe without the cabbage to see if that is the moisture problem then? Guessing the almondmilk isn't necessary to hold it together as another option

comment Soymilk for drinking vs. soymilk for tofu making
Oh and for nice firm tofu: Chinese often boil the curd in pieces before adding to recipes like stir-fry. Counter intuitive throwing into water but beats weighting and squeezing.

Flavor-wise optimal for drinking? As a beverage, the soymilk can be further manipulated with flavor sweetener or thickener stabilizer emulsifier so I don't reckon the two uses make a difference in choosing your protocol. maybe you could experiment for us all by trying a couple different methods and take a sample of the milk out of each tofu batch.

shouldn't you be asking if the other bus passengers are safe from the kimchi? I see the headlines now: explosive event rocks commuters...

comment How do you get garlic to stick to green beans?
How are the beans prepped before they're sauteed? stir-fry has the beans steamed and evaporated-dry before hitting the oil and garlic.

So, your real Q is: to get firm tofu, which other factors are critical besides nigari and an accurate thermometer?

Will vote this the correct answer soon; just want 100% sure... as rackandboneman hypothesized, something might be going on. Over on veganmiam.com, she says pineapple juice "produces the funky smell". Wish there was a glutamate test strip like for PH that would show an increase with the addition of juice.
