What are techniques to make homemade pasta without a pasta machine? They are not Italian, but spatzle and udon can also generally be made without additional equipment: smittenkitchen.com/blog/2011/03/spaetzle shesimmers.com/2009/07/… |

Stir fry sauce quantity Years later, I come back to say that 2 tbsp per 4 cups of vegetables seems to be a good rule of thumb for my tastes. |

What is a substitute for Poblano Peppers? Hatch chiles or larger Californias might work as well. |

How can I uniformly chop peanuts? I bet a coffee grinder would also do the trick. |

Is it possible to use casserole dish to make no-knead bread? Also most casserole dishes are too flat for the size that the basic no-knead recipe expands to. I have made the recipe in a stainless steel soup pot without any problems, even though I was originally told stainless steel didn't hold heat as well as the recommended containers. I think the keys are 1. a lid, 2. the size (roughly as round and high as you want the bread to be), and 3. WON'T EXPLODE. :) |

Why are we not generally using egg in Buckwheat crêpe (or galette) but only in Wheat Flour crêpe? I just looked at different buckwheat crepe recipes and they all had eggs in them. However, I often make crepes without eggs and use some chickpea flour mixed in with the regular flour. It works because of the flavor of the chickpea flour and the extra protein. Maybe buckwheat flour has the same effect? |

Stir fry sauce quantity Thanks for such a thorough answer. I wish there were an easy fix but I agree especially with your last statement, that Asian cooking doesn't seem to work for inexperienced cooks. The only Asian food that has come out of our kitchen that I've been pleased with have been salads. I'm determined to make this happen though. |
