Do you have a probe thermometer by any chance? Either a remote one or just one where you could monitor temps outside the cooker? Temp isn't a perfect indicator, but fall off the bone will finish at a higher temp than ribs with some tug to them. Ideally you'd get one with 2+ probes, one for meat, and one for your grate temp.

Yeah, I have a very similar model (I think it's the same one, just a Brinkman brand). I recently bought a relatively flimsy enameled grill pan, bent it (chipped the enamel badly doing this, so It won't last long) so it would fit, and used it for my charcoal. Works like a charm.

@Dave probably, but test both probes. Boil some water, and when it boils, they should read 212.

@Dave yeah, that's not uncommon to have it "stall out" though that is a bit of a low temp for a stall. Keep an eye on your smoker temp (don't trust the therm on your smoker unless you've tested it, put an oven therm on the rack). Good call on not touching it. The more you open the door/lift the lid, the more tune it's going to take.

It might help if you were a bit clearer about what you were looking for. The video you linked didn't address catching dripping at all, and Mr. Brown uses the very same Weber you're looking at in his second example. Could you clarify the concern?

@ItayMoav-Malimovka if you can't find anything you like, then getting a local craftsman to weld you one from cast iron shouldn't be a problem. Just make sure to season it properly (the same way you'd season a cast iron pan).
