Help in identifying a Thai condiment It's certainly spicy-hot -- some kind of chili is a main ingredient for sure, but it's also got a kind of burnt taste? Maybe? I'm thinking maybe it's something made from roasted chilis and garlic and oil... But, like, roasted to the point of black. But that's just a guess. |

“Indian Spicy” vs. “Thai Spicy” Is the Indian "red chili powder" the same thing as American red pepper (normally Cayenne powder)? What kind of peppers are typically used? (they are frustratingly always called "red chilis" in recipes -- there are dozens, if not hundreds of chili varieties that are red! |

Does dry frying tofu really cause tofu to better soak up a marinade? @Jefromi I don't know who you have cooking tofu for you, but most every time i've had family or friends try to make it for me, it's certainly been "well meant but disastrous"! It's just a tricky thing to cook if you're not used to dealing with it, but it's a stereotypical vegetarian food, so people sometimes try to have it when they know they are having a veg*n for dinner... |

What do you have for breakfast during camping Although if you do go the dark path of instant, a backpacking enthusiast friend of mine discovered that those little individual packets of instant oatmeal are lined, and you can put the hot water right in there sans bowl! (NB: i don't know what brand he had; we're in US, so probably Quaker or something along those lines? But worth investigation!) |

How do you get a feel for the heat (direct heat)? for 4. you can also dip the end of a wooden spoon to get bubbles, so you don't have tiny bits of food floating around gettin' burnt. |

How to cut an egg without the yolk sticking to the knife? I like those dedicated wire egg slicers (something like this: gifttrap.com/images/lovehate/egg_slicer.jpg) -- they are pretty cheap, they do a good job, and they are also very handy for slicing mushrooms and strawberries into nice, even slices. (I actually bought mine when I was vegan and didn't eat eggs...) |

Substitutions for greek yogurt? I was thinking this, exactly. I have often seen greek yogurt used as a substitution for sour cream, so it would make sense if it worked the other way as well. Especially in the OP's original usage for a cold sauce for fish tacos. |
