An avid, ambitious homebrewer, I'm currently brewing on an all-electric system capable of 20+ gallon batches.

comment What is a good bread recipe for light bread, but able to be shaped?
I came here to suggest Challah. I've been making it for Easter for quite a few years. It's got a lovely, soft crumb.

comment Do sodastream PET bottles have normal 28mm threaded caps?
I'm not sure I believe the bit about the broken threads. Soda caps seal on a soft membrane under the cap--the threads have nothing to do with it. As long as the cap threads down securely, the seal is made between the top of the bottle and the inside of the cap, regardless of whether the threads are broken or not.

comment What is the optimal temperature for making coffee, specifically in an AeroPress?
If you like the flavor of the milk steamed a little hotter, go for it. It's personal preference. If you don't, I'm not sure what else you could do, except possibly heat the coffee separately to a higher temp.

comment What's different between canned beer and bottled beer?
As an upcoming craft brewer myself, I've been considering canning for all these reasons. +1

comment Is Beer Can Chicken safe?
I own the top one. It's a nice product, and works a treat. Just be aware you can't close some grills (like mine!) with the chicken standing up in it.

comment What causes the sugar to turn grainy after I have cooked it for a glaze or cooking it with butter for carmelizing?
No worries, @Mong134. It doesn't bother me, I was just curious. Thanks for coming by to comment!

This is the only way I eat grapefruit now. Can be done with any citrus and is also known as supreme.

comment Baking naan without an oven?
@SunishthaSingh, most of the recipes I've seen use yogurt. I don't know if it will be exactly the same as your recipe with egg, but you should try it and find out.

comment Baking naan without an oven?
@Sobachatina, I cranked the griddle up as high as it would go, and I was very pleased with the result. It's obviously not the same as proper naan cooked in a tandoor, but they were soft, chewy and delicious.

comment Navigating the different types of cookware - new kitchen advice
That's a heck of an answer. I would add two things: a mention of forged iron pans (like this DeBuyer Mineral Element B). I have two now, and they have become my go-to pans for pretty much everything. Eggs don't stick, meat sears beautifully. And second, I love my little butter melter :) I don't have a microwave, so it comes in handy for melting butter (who knew?!), and heating up small amounts of sauces, leftovers, whatnot.

comment What features should I look for when buying an espresso maker?
The differences can be many, especially once you get away from department store machines (Breville, etc.). They generally use inexpensive pumps and heating systems, and a pressurized portafilter to simulate crema. I don't have time for a full answer at the moment, but check out CoffeeGeek's forums for more information than you can shake a coffee bean at.

comment Wood for a cutting board, will sanding make it food safe?
SBF is a great product, but not in this application. The problem here is that SBF (and any film finish--polyurethane, etc) only sits on the surface. It will be worn away and cut through by use as a cutting board, which will expose the treated wood underneath.
