I'm not sure if nutrition questions are on topic here, but steaming vegetables is commonly considered a method to better preserve most of the properties of the food.

I personally find that most corn do not even require soaking. Fresh corn can just go directly on the grill wrapped in some foil. Corn is so adjusting, that the seasonings can be added before or after grilling.

You probably need to add some more liquid, pref. water so that the flavors can seep through the squash. You recipe seems to have very little liquid and since you seem to be using a lot of cream, maybe the flavors don't get absorbed by the squash because the sauce is too thick?

In South India, before a traditional full meal(generally only on festivals and the like), people eat a tiny mouthful of some dessert first before the actual savory meal and then end with the same dessert in a larger portion. I think the reasons are twofold. One, to begin with something sweet as an auspicious thing, where life will also have some sweetness yada yada and the other, I think more important reason to follow the savory before the sweet is so that you don't eat too much dessert and make yourself sick :)
