Have to agree with the "old eggs." I am lucky to know someone who keeps chickens and we sometimes get eggs the day after they are laid. Experience says that hard boiling them when they are fresh makes them impossible to peel.

+1 for using beer in chili. My favorite chili recipe is a steak chili that uses beer as it's main liquid. I think it works nicely.

I wish I had a good sugestion for you, unfortunately I don't. I do want to comment that the "alcohol cooks out" story I had often heard in the past is probably not accurate. I don't have a primary source, but cooking.cdkitchen.com/AHealthyBite/385.html has an article that does reference peer reviewed statistics on how much alcohol remains after cooking.

I disagree about the refrigerator. Bread will get moldy more quickly at room termperature. The refrigerator does change the texture of bread quickly though, even if it hasn't had time to get stale yet.

You say you make the bread by hand sometimes. Does the dough rise when it's on the counter? If it's not rising then, I would think you need to simply replace the yeast.

Many ovens I have seen (in the US) don't go below 170F. It's always annoyed me, but I guess it's an attempt to keep people from holding food at an unsafe temperature.
