Sugar is a perfectly good preservative that will probably last forever under ideal circumstances. That being said, honey's anti-bacterial properties (as well as it being much easier to get ahold of for ancient civilizations) does make it "better" from a historical standpoint. Also, if the circumstances are less than ideal (such as being exposed to high levels of humidity for an extended period of time) then sugar can quickly change from being a toxic environment for microbes to being a playground. | |
