I accidentally left my 3 pound rack of lamb out all night to thaw. Its internal temp right now is 60 degrees. Should I just throw it out?, or is it still safe to cook?

  • When it's left out, it's actually the internal temperature that matters more than the internal. (the middle might be fine, while the outside is a breeding ground for all sorts of stuff) – Joe Oct 12 at 16:55

That is an expensive mistake. Should always thaw in the fridge. If the plan is to thaw on the counter for an hour and then put it in fridge to reduce the time to thaw an hour it does not work that way. You will only reduce the thaw time by a few minutes. Not worth the risk. – paparazzo Oct 12 at 17:21
