I've always used purpose made oven bags for roasting my turkeys. The bag prevents any air flow from reaching the turkey surface, but I've never had a problem with uneven cooking.

There are convection ovens specifically designed to go over the range, some of which also can be used to vent smells/smoke from the range. Those will (obviously) be safe to use over a range.
